For the longest, I have been telling myself that I was going to make homemade granola. I love the way it taste, and I also love how versatile it is, you can have it with milk, yogurt or as something to snack on throughout the day...For some reason, I kept on running out of the ingredients, first it was honey and then it was the oats. Out of the blue, looked up a recipe and made it. If I had nuts on hand, I would have added them; however, I was not running back to the store. I found this recipe to be super yummy, and would also be wonderful for a family that is on the go. You can divide portions in the snack size bags and put them in the freezer, and it is ready for you the next day or when you need them.

½ tsp. salt
½ tsp. ground cinnamon
¼ c. vegetable oil
¼ c. honey
1 tsp. vanilla
1 ½ c. dried cranberries
1/2 c. dried raisins
4 c. old fashioned, rolled oats
½ c. packed brown sugar
1 c. coconut flakes (optional)
1 tbsp Ground Flaxseed (optional)
Preheat oven to 300 degrees F.
In a large bowl, mix together the oats, brown sugar, salt and cinnamon.
In a saucepan, warm the oil and honey. Stir in vanilla. Pour the liquid over oat mixture.
Stir gently with a wooden spoon. Finish mixing by hand.
Spread granola on a foil-lined baking tray (15x10x1 in.).
Bake for 40 minutes, stirring after 20 minutes, and they every 10 minutes.
Transfer pan to wire rack, stir in raisins/cranberries, coconut flakes, Flaxseed and allow to cool completely.
Seal in an airtight container or plastic bags. Store at room temperature (or freeze for up to 3 months).
