So I decided to try this recipe on a whim. I tend to eat a lot of asparagus during the spring/summer months (no reason). I came across this recipe and decided to give it try, and I was very impressed. This is perfect as an appetizer or if you’re like me this can turn into a meal (of course with portion control). Seeing how this will be my first summer as a vegetarian. I’m interested to see what recipes will be my “go to” recipes for the summer. Overall, this recipe is going into my “recipes I love” file.
